The History of Biryani
Hyderabadi biryani is generally believed to originate in the kitchens of the Nizam of Hyderabad. Hyderabadi biryani originated as a blend of Mughlai and Iranian cuisine in the kitchens of the Nizam, rulers of the historic Hyderabad State. As such Hyderabadi Biryani is a staple part of the Indian Cuisine; from which stems biryani as a concept.
The entire process is carefully thought out as the biryani is prepared with meat marinated with spices overnight and then soaked in yogurt before cooking. The gosht (meat) is sandwiched between layers of fragrant long-grained basmati rice, and cooked on dum (steaming over coals), after sealing the handi (vessel) with dough.
This is a challenging procedure as it requires meticulous attention to time and temperature to avoid over- or under-cooking the meat. The result is simply authentic ‘biryani’. Enjoy!
Although in India, appreciation for food and it’s pursuit of perfect is as old as time itself; there are many varied expressions of it throughout the country. Here at Persis we specialize in many Punjab dishes including our expertly applied Tandoori (oven) grilled plates.
The local cuisine of Punjab is heavily influenced by the agriculture and farming lifestyle prevalent from the times of the ancient Harappan Civilization. Locally grown staple foods form the major part of the local cuisine. Distinctively Punjabi cuisine is known for its rich, buttery flavours along with the extensive vegetarian and meat dishes. As such, an evening at Persis lets you experience quite literally another world of flavor!
We believe in people, as the most important element of the puzzle. Persis chefs are extensively trained, with decades of masterful cooking both foreign and abroad. Especially our Biryani head, who has dutifully studied the art of both original preparation in the ancient ways as well as applying this technique for modern & new dishes as well. We are one big family and move as a whole; great food truly is our mission and promise to you!
